Celebrating the art of Italian Salumi, with 2 days of food & learning the art of curing for your pleasure at Woolumbi Farm. Under the expert tutelage of Kenneth Neff, who completed his training of many years to hone his skills in a master class in Tuscany which is invitation only.
This is an aged old tradition of fattening the pig to preserve for months to come. The course is about connecting with our past and teaching ways of preserving our abundance for leaner times. It’s a gourmet indulgence where you will take away with you a history & skill set in the art of preserving meat.
This course involves amazing home cooked lunches & morning/afternoon tea, not to mention a good taste and conversation on food ethics.

You will learn the art of making: Fresh sausages, Salami, Lonza, Coppa, Prosciutto, Lardo , Cottechino


Coming from a Swiss background, Kenneth was delighted when he landed the job of cleaning kid at a local Swiss Butcher in Bayswater, 46 years ago at age 14. The art of the butcher’s work quickly captured & cemented Ken’s interest in cooked, smoked, air dried and fermented small goods.

Ken’s passion for salumi making quickly saw him training with Swiss, German, Spanish & Italian small goods makers where he honed his skilled in the art. 

At a chance meeting, Ken was asked  to spend some time with Danilo & Luciana Parti in San Donato, Poggio to further refine his skills – this ‘spending time’ is by invitation only from some of the finest producers in Italy. 

French Chef, Geraud Fabre of South Yarra restaurant, France Soir says: “Kenneth is a very talented man. His charcuterie is exceptional”.

This intensive 2 day workshop, is one not to be missed if you would like to learn the fine art of salumi. You will take away a breadth of knowledge and your kitchen will become a beacon of gastronomy. 


Gourmet Sausage Making Courses

At Woolumbi Farm we love creating fine foods from our rare breed meat. We are known for our gourmet sausages that free from artificial preservatives and fillers. Our customers can’t get enough of the quality and taste of our sausages, and we invite you to learn the art of sausage making for yourself!

Learn the skill of making artisan sausages using our free range, ethically farmed pork with concoctions of herbs and spices. 

Our course includes notes for you to refer back to, a Woolumbi Farm produce morning tea along with 2kg of sausages made on the day to take home. It’s an awesome half day full of great learning and even better food!
